Further north it remained the preferred drink of the bourgeoisie and the nobility who could afford it, and far less common among peasants and workers. Estimates of bread consumption from different regions are fairly similar: Leavened bread was more common in wheat-growing regions in the south, while unleavened flatbread of barley, rye or oats remained more common in northern and highland regions, and unleavened flatbread was also common as provisions for troops.
